800 g tomato
1 cucumber
1 bell pepper
1 onion
1 clove of garlic
1 red chili
500 ml vegetable stock
10 tbs Organic Coconut Blossom Vinaigrette
“Exotic Blossom”
4 tbs cold pressed olive oil
fresh basil leaves
sea salt
black pepper

Quarter tomatoes and remove stalks.

Peel and dice cucumber.

Remove seeds from bell pepper and chili and chop into pieces.

Peel onion and garlic and dice roughly.

Put all vegetables into a blender and puree.

Add vegetable stock, coconut blossom vinaigrette, olive oil and basil and blend once more.

Season to taste with salt and freshly ground pepper.

Gazpacho is best served chilled, so keep in the fridge until it´s time to eat.

 


Tip:

In case your blender shouldn´t be big enough – just mix it in 2 goes, pour everything into a bowl and in the end mix everything together thoroughly with a whisk.
