4 fish fillets, from sustainable fishing
4 potatoes
2 carrots
100 g frozen peas
2 shallots
1 clove garlic
2 Bund bunches of fresh garden herbs
60 g Organic Coconut Oil – Premium Quality
1 untreated lemon
sea salt
black pepper
8 pieces of baking parchment and kitchen twine

Peel tomatoes and cut into thin slices.

Peel and finely dice shallots.

Salt and pepper the fish fillets.

Melt coconut oil and mix with diced shallots and garlic, add the finely chopped herbs and season with salt and pepper.

Lay two baking parchments on top of each other and layer potatoes, carrots and peas onto it. Season with salt and pepper. Place one fish fillet on top and drizzle with coconut oil mixture and freshly squeezed lemon juice.

Close parchments and tie tightly at the ends with kitchen twine. Bake for about 25 minutes in preheated oven at 200°C (top and bottom heat).
