Preheat oven to 180°C top and bottom heat |

Wash and peel sweet potatoes and parsnips and cut into sticks |

Line a baking tray with baking parchment and spread sticks on it |

Melt coconut oil in a water bath and pour over vegetables. Season with sea salt |

Bake on middle rack for about 15 minutes |

Turn on the hot air grill for the last 3 minutes

Serve with coconut blossom vinaigrette |
Tip:
They also taste incredible with our “summerly coconut blossom ketchup” or our “coco-basil pesto”.
