Sweet Potato Curry

70 g Organic Creamed Coconut
2 sweet potatoes (approx. 600 g)
1 large red onion
1 red pepper
1 pc ginger (2 cm)
1 chili pepper
2 tsp "Garlic"
1 tbsp Organic Coconut Blossom Syrup
salt
black pepper
curry powder
500 ml vegetable broth
fresh coriander

Cube the Creamed Coconut.

Peel the sweet potatoes and cube them.

Peel the onion and cut into small stripes.

Cut the red pepper into pieces and remove seeds.

Peel ginger and cut it into small cubes.

Cut the chili pepper into small rings.

Heat the Coconut Seasoning Oil “Garlic” in a pan and fry onion.

Add ginger and chili pepper.

Caramalize with Coconut Blossom Syrup.

Add sweet potatoes and red pepper and stew.

Season with salt, black pepper and curry powder.

Add the Creamed Coconut and stir well.

Pour the vegetable broth, stir and simmer for approx. 15 minutes.

Season with Salt, black pepper and serve the curry with fresh coriander.
